Spring is for pastels; summer for brights. And fall is the time of deep, warm jewel tones — amber for yellow winter squash, emerald for dark, leafy greens, carnelian for the orange tones of yams, ruby for the deep red of beets and cranberries. Why, then, is our Thanksgiving table so pale?
